Sweet and Spicy Sichuan Style Green Beans Over Jasmine Rice Pilaf

 A while ago I came across a spicy sichuan style green bean recipe that looked simply delicious. No, it literally looked simple to make and delicious at the same time. I’m the type of person who abhors going to the grocery store. Maybe it’s because I have to haul my groceries all the way back to my condo or the mere act of me having to look decent in order to step out into civilization irks me, regardless, I hate it.  So when I came across this recipe and reviewed the ingredients, I pretty much had everything sitting in the kitchen cabinet or my fridge which made me one happy, but hungry girl. Not only is this dish vegetarian but it’s pleasing to the eye. Yes, I know that sounds a bit ridiculous but like everyone else, including you, I eat with my eyes. I’ll be the first to say, presentation and appearance DO make a difference, especially when it comes to food. Spend a little extra time dressing up this recipe, invite some friends over, have a drink and you’re good to go!

Sweet and Spicy Sichuan Style Green Beans Over Jasmine Rice Pilaf

Ingredients:

1 clove garlic, minced

1-inch knob of fresh ginger, minced (should equal about 2 teaspoons)

1 tablespoon plus 1 teaspoon apple cider vinegar

2 teaspoons soy sauce

1 tablespooon sugar

1 teaspoon red pepper flakes (or according to preference)

1 pound green beans

Directions:

1. Add one teaspoon of vegetable oil in hot wok and add beans. Sauté for 5 minutes. Set aside.

2. Add one teaspoon of vegetable oil in same wok, add ALL the above ingredients (except beans) into wok and let simmer for a couple of minutes.

3. Add in beans and stir fry for 3-4 minutes.

And you’re done! How easy is that recipe? I enjoy eating these green beans (especially when I can’t handle the heat) with a side of rice. There are no rules to cooking so if you need more of anything, go for it!
